A gourmet twist on classic meatloaf, this French Onion Meatloaf recipe combines caramelized onions, seasoned beef, and a rich Gruyère cheese sauce for a comforting dish that’s equal parts hearty and elegant. It’s the ultimate comfort food dinner.

  • 2 lbs ground beef (80/20 blend)
  • 2 large eggs
  • 1 cup Panko breadcrumbs
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1 tablespoon fresh thyme, chopped
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 3 large sweet onions, thinly sliced
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup milk
  • 1 cup Mozzarella cheese, shredded
  • 1 cup Gruyère cheese, shredded
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onions with a pinch of salt and cook, stirring frequently, until caramelized, about 25–30 minutes. Deglaze with beef broth as needed. Stir in garlic and cook 2 minutes. Reserve half of the caramelized onions for topping.
  2. Preheat oven to 375°F (190°C).
  3. In a bowl, combine ground beef, breadcrumbs, eggs, Worcestershire sauce, Dijon, thyme, salt, pepper, and half the caramelized onions. Mix gently.
  4. Shape the meat mixture into a loaf on a parchment-lined baking sheet.
  5. Bake uncovered for 35–40 minutes until cooked through.
  6. Melt butter in a saucepan, stir in flour to form a roux, and cook 1–2 minutes.
  7. Gradually whisk in milk and beef broth until thickened. Stir in Mozzarella and Gruyère until smooth to create the cheese sauce.
  8. Remove the meatloaf from the oven. Top with the reserved caramelized onions and spoon over the cheese sauce.
  9. Sprinkle with additional Gruyère cheese, then broil for 3–5 minutes until bubbly and golden brown.

Notes

  • For extra depth of flavor, use a splash of wine while caramelizing the onions.
  • Substitute Gruyère with Swiss cheese if preferred.
  • Leftovers make fantastic sandwiches the next day.
