6 cups sliced peaches (fresh, frozen, or canned and drained)
3/4 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 tablespoon cornstarch
1 cup all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
1/2 cup unsalted butter, melted
Instructions
Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
In a large bowl, combine sliced peaches, sugar, lemon juice, vanilla, cinnamon, and cornstarch. Stir until evenly coated. Pour into prepared baking dish.
In another bowl, whisk together flour, sugar, baking powder, and salt. Stir in milk until smooth. Mix in melted butter.
Pour the batter evenly over the peaches. Do not stir. The batter will rise and form a golden topping as it bakes.
Bake for 40–45 minutes, or until the top is golden brown and the peach filling is bubbling.
Allow cobbler to cool for at least 10–15 minutes before serving.
Notes
Serve warm with vanilla ice cream for an extra treat.
Store leftovers in the refrigerator for up to 3 days.
