2 ripe bananas (150g/5oz after peeling, ~2/3 cup mashed)
1/2 cup peanut butter (smooth or creamy, xylitol-free)
1/3 cup honey
2 eggs
1 1/2 cups all-purpose or wholewheat flour
2 1/2 tsp baking powder
1/4 cup vegetable, canola, peanut, or olive oil
3/4 cup water
500g / 1lb potatoes (peeled and cut into 2 cm/1″ pieces)
2 tbsp honey (for frosting)
1/2 cup plain low-fat unsweetened yogurt or sour cream
2–4 tbsp water (for frosting consistency)
12 small dog bone biscuits (optional, for decoration)
Instructions
Preheat oven to 180°C (350°F) or 160°C (320°F fan). Line a 12-hole muffin tin with cupcake liners.
Mash ripe bananas in a bowl until mostly smooth.
Add peanut butter, 1/3 cup honey, and eggs to the mashed bananas. Whisk until smooth.
Mix in flour, baking powder, oil, and 3/4 cup water. Whisk until the batter is smooth.
Divide batter evenly into cupcake liners, filling each about three-quarters full.
Bake for 22 minutes, or until golden and a skewer comes out clean.
Cool cupcakes completely on a wire rack for at least 30 minutes.
Boil peeled potato pieces in water for 20 minutes until very soft.
Drain potatoes and return to the pot. Add yogurt, 2 tbsp honey, and 2 tbsp water.
Beat with an electric mixer on speed 3 for 1 minute, then speed 5 for another minute until silky smooth and creamy. Add more water if needed for a spreadable consistency.
Transfer frosting to a piping bag with a 1.5cm round nozzle. Pipe swirls onto cooled cupcakes.
Decorate with a dog bone biscuit if desired.
Notes
Ensure peanut butter is xylitol-free and has no added sugars or salt.
Whole wheat flour can be substituted for all-purpose flour for added fiber.
Use other piping nozzles for different frosting textures.
All ingredients must be safe for dogs; avoid toxic additives like xylitol.
