0.5 cup unsalted butter (softened)
1 cup granulated sugar
2 large eggs
0.5 teaspoon almond extract
1.75 cups all-purpose flour
2 teaspoons baking powder
0.5 teaspoon kosher salt
1 cup powdered sugar
0.25 teaspoon almond extract
1 tablespoon milk
0.5 cup sliced almonds
Instructions
Preheat your oven to 350°F and line a cookie sheet with parchment paper.
In a mixing bowl, beat the unsalted butter and granulated sugar together until light and fluffy, about 3 minutes.
Add the eggs and ½ teaspoon of almond extract to the butter mixture, beating until well combined and smooth.
Gently mix in the flour, baking powder, and kosher salt until just blended.
Using a 2 Tablespoon cookie scoop, drop mounds of the dough onto the prepared cookie sheet, spacing adequately apart.
Bake for 12-14 minutes or until edges are firm and bottoms are lightly browned. Cool on the pan for 10 minutes before transferring to a wire rack.
In a separate bowl, whisk together powdered sugar, ¼ teaspoon almond extract, and 1 tablespoon milk until smooth; drizzle over cooled cookies and top with sliced almonds.
