  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Lemon wedges, for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions until they float to the top. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the drained gnocchi to the skillet in a single layer. Let them cook undisturbed for about 3-4 minutes until they turn golden brown.
  5. Gently stir the gnocchi to brown on all sides, cooking for an additional 3-4 minutes.
  6. Once the gnocchi are crispy, add the chopped spinach to the skillet. Stir to combine and cook until the spinach is wilted, about 2-3 minutes.
  7. Remove the skillet from heat and sprinkle the crumbled feta over the gnocchi and spinach. Toss gently to combine.
  8. Season with salt, pepper, and red pepper flakes, if using, to taste.
  9. Transfer the dish to a serving platter and serve immediately with lemon wedges on the side, if desired.
