  • 1 pound fettuccine pasta

  • 1.5 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Cook fettuccine pasta according to package directions. Drain, reserving about 1 cup of pasta water.
  2. While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth and heavy cream. Bring to a simmer, then reduce heat to low.
  5. Stir in grated Parmesan cheese until melted and the sauce is smooth.
  6. Return cooked chicken to the skillet. Season with salt and black pepper to taste.
  7. Add cooked fettuccine pasta to the skillet with the sauce. Toss to coat evenly. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
