  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 4 teaspoons sesame oil
  • 4 teaspoons honey
  • 2 teaspoons sriracha (or to taste)
  • 2 cloves garlic (minced)
  • 2 teaspoons grated fresh ginger
  • 6 tablespoons warm water (more if needed)
  • 2 green onions (for serving)
  • Toppings as desired (e.g., toasted sesame seeds, crushed peanuts, shredded carrots, cucumber slices)

Instructions

  1. Boil the spaghettini according to the package instructions until tender but still firm. Drain and rinse with cold water to stop the cooking process. Set the noodles aside in a colander.
  2. In a medium bowl, whisk together the creamy peanut butter, soy sauce, rice vinegar, sesame oil, honey, sriracha, minced garlic, and grated ginger until smooth and fully combined.
  3. Gradually add warm water a tablespoon at a time, whisking continuously, until the dressing becomes smooth and pourable, perfect for coating the noodles evenly.
  4. Place the chilled noodles in a large bowl and pour the sesame dressing over them. Toss thoroughly to ensure every strand is well coated with the creamy sauce.
  5. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes. This resting time allows the noodles to soak up the flavors for a richer taste.
