  • 1/2 cup butter, melted
  • 1 tablespoon sugar
  • 2 (8-ounce) packages cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • Pink food coloring
  • Rainbow sprinkles
  • Additional circus animal cookies for topping

Instructions

  1. Place the circus animal cookies in a large zip-top bag and crush them with a rolling pin, or pulse in a food processor until finely ground.
  2. In a large bowl, combine the crushed cookies with melted butter and 1 tablespoon of sugar. Stir until the mixture starts to stick together.
  3. Grease an 8-inch springform pan and press the crust mixture evenly into the bottom. Chill the crust in the freezer for at least 30 minutes.
  4. While the crust chills, beat the cream cheese, sour cream, 1 cup sugar, vanilla extract, and pink food coloring in a bowl until smooth and well combined.
  5. Spread the cheesecake mixture evenly over the chilled crust. Refrigerate the cheesecake for at least 4 hours or overnight to set.
  6. Before serving, sprinkle rainbow sprinkles over the cheesecake and press one circus animal cookie into each slice for decoration.
