  • 2 pounds bone-in chicken (thighs, breasts, drumsticks)
  • 2 cups vegetable oil
  • 1 cup all-purpose flour
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon freshly ground black pepper
  • 2 large eggs
  • For the Waffles:
  • 1 tablespoon granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 cup sour cream
  • 1 cup milk
  • 4 tablespoons butter (melted)
  • 2 large eggs (separated)

Instructions

  1. Brine the chicken by soaking it in buttermilk mixed with kosher salt for at least 30 minutes.
  2. Prepare the coating by mixing flour, paprika, cayenne pepper, salt, and black pepper in a bowl.
  3. Coat the chicken pieces in the egg wash and then the flour mixture.
  4. Heat vegetable oil in a deep skillet over medium-high heat until it shimmers.
  5. Fry the coated chicken for about 15-20 minutes until golden brown and cooked through.
  6. Make the waffle batter by whisking together flour, sugar, baking powder, baking soda, sour cream, milk, and separated egg whites.
  7. Pour batter into a preheated waffle iron and cook until golden brown and fluffy.
  8. Serve the waffles hot topped with fried chicken, butter, maple syrup, and a dash of hot sauce.

Notes
