  • 4 pita bread

  • 1/4 cup water
  • 1 teaspoon salt
  • 2 diced tomatoes
  • 1 cucumber
  • 1 cup finely shredded lettuce
  • 1/2 thinly sliced red onion
  • 1/4 cup sliced pickles
  • 1/4 cup fresh parsley

Instructions

  1. Prepare the Chicken Marinade: Cut the chicken thighs into thin strips. Whisk together olive oil, lemon juice, minced garlic, and shawarma spice blend. Add chicken and marinate for at least 30 minutes.
  2. Whip Up the Tahini Sauce: Combine tahini paste, lemon juice, minced garlic, and salt. Whisk in cold water until smooth.
  3. Chop the Toppings: Dice tomatoes and cucumber, shred lettuce, slice red onion, chop parsley, and slice pickles.
  4. Cook the Shawarma Chicken: Heat olive oil in a skillet. Cook chicken in batches until browned and fully cooked. Let it rest.
