  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • Streusel Topping:
  • 1 cup firmly packed brown sugar
  • 1/4 cup granulated sugar
  • 2/3 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon ground cinnamon
  • For Serving:
  • Caramel sauce, for drizzling

Instructions

  1. Preheat oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper with overhang for easy removal.
  2. Make the crust: In a large bowl, whisk together flour, brown sugar, cinnamon, and a pinch of salt. Cut in softened butter until crumbly. Press evenly into the bottom of the prepared pan
  3. Prepare the filling: Beat softened cream cheese and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each. Mix in apple juice, vanilla extract, and salt.
  4. Assemble filling layer: Pour the cream cheese mixture over the crust and spread evenly.
  5. Prepare the apples: Toss diced Granny Smith apples with brown sugar, apple juice, cinnamon, nutmeg, and cloves until evenly coated. Distribute apples over the cheesecake layer.
  6. Make the streusel topping: In a medium bowl, whisk together brown sugar, granulated sugar, flour, oats, and cinnamon. Cut in softened butter until crumbly. Sprinkle evenly over the apple layer.
  7. Bake the bars for 55 to 60 minutes, until the top is golden and the center has a slight jiggle.
  8. Cool completely at room temperature, then chill in the refrigerator for at least 2 hours to set.
  9. Before serving, drizzle generously with caramel sauce. Cut into squares and enjoy.
