  • 1/2 teaspoon Freshly ground black pepper
  • 1 tablespoon Extra-virgin olive oil
  • 5 slices Thick slices fresh mozzarella
  • 2 medium Slicing tomatoes
  • 2 cups Baby spinach
  • 1 tablespoon Balsamic glaze

Instructions

  1. In a large bowl, combine ground chicken, grated Parmesan, minced garlic, torn basil, balsamic vinegar, kosher salt, and freshly ground black pepper. Stir gently until well incorporated.
  2. Divide the mixture into five equal portions and shape into burger patties of uniform thickness.
  3. Heat extra-virgin olive oil in a skillet over medium heat until hot.
  4. Place the patties in the skillet and cook for 5-7 minutes on each side, until golden-brown and an internal temperature of 165°F is reached.
  5. During the last minute of cooking, top each burger with thick slices of fresh mozzarella and cover the skillet briefly to melt the cheese.
  6. Serve each patty on a bed of fresh baby spinach, topped with slicing tomatoes and drizzled with balsamic glaze.
