1 pound pasta
1 pound broccoli florets
2 tablespoons olive oil
4 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional)
1/2 cup grated Parmesan cheese
Salt and black pepper to taste
Instructions
Cook pasta according to package directions. Reserve about 1 cup of pasta water before draining.
While pasta is cooking, blanch the broccoli florets in boiling water for 2-3 minutes until tender-crisp. Drain.
In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes (if using) and cook until fragrant, about 1 minute.
Add the drained pasta and blanched broccoli to the skillet.
Add Parmesan cheese and toss to combine. Add reserved pasta water a little at a time to create a light sauce and ensure ingredients are coated.
Season with salt and black pepper to taste. Serve immediately.
Notes
For a creamier broccoli pasta, add a splash of heavy cream or a tablespoon of butter.
You can add cooked chicken or shrimp for a more substantial meal.
