  • 1 pound broccoli florets
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions. Reserve about 1 cup of pasta water before draining.
  2. While pasta is cooking, blanch the broccoli florets in boiling water for 2-3 minutes until tender-crisp. Drain.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes (if using) and cook until fragrant, about 1 minute.
  4. Add the drained pasta and blanched broccoli to the skillet.
  5. Add Parmesan cheese and toss to combine. Add reserved pasta water a little at a time to create a light sauce and ensure ingredients are coated.
  6. Season with salt and black pepper to taste. Serve immediately.
