  • 3 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 4 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 2/3 cup soy sauce
  • 1/3 cup apple juice
  • 1/3 cup ketchup
  • 1/4 cup bourbon
  • 1 cup brown sugar
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, mix cornstarch with salt and pepper. Toss in chicken pieces until coated.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Brown the chicken on both sides for about 6 minutes total; set aside.
  4. Sauté minced garlic in the skillet for about 30 seconds.
  5. Add chicken broth, soy sauce, apple juice, ketchup, bourbon, and brown sugar to the skillet. Bring to a gentle boil.
  6. Lower heat and return chicken to the skillet.
  7. Simmer for about 10 minutes, or until the sauce reduces by half and thickens.
