  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/4 cup coffee liqueur (like Kahlúa)
  • 2 tbsp whiskey bourbon
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 1 1/2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line a cake pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together buttermilk, vegetable oil, eggs, coffee liqueur, whiskey, and vanilla extract.
  4. Pour the wet ingredients into the dry mixture, stirring gently until just combined.
  5. Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick comes out clean.
  6. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  7. For frosting, beat together coffee liqueur, bourbon, and heavy cream until soft peaks form.
  8. Gradually add powdered sugar until the frosting is thick and spreadable.
  9. Frost the cooled Big Lebowski Cocktail Cake as desired and serve.
