1 tsp salt
1/2 tsp freshly ground black pepper
1 tsp brown sugar
1/2 tsp paprika
1/2 tsp crushed red pepper flakes
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp dried sage
1/4 tsp dried thyme
1/4 tsp ground nutmeg
1 tbsp fresh parsley, finely chopped
1 tbsp cold water

Instructions
In a small bowl, combine salt, pepper, brown sugar, paprika, red pepper flakes, garlic powder, onion powder, sage, thyme, and nutmeg. Mix until well blended.
Place the ground pork in a large bowl and sprinkle the seasoning mix evenly on top. Add cold water and parsley. Gently mix until just combined.
Cover the bowl and refrigerate the mixture for 10–15 minutes to let the flavors meld.
With damp hands, divide the meat into 8–10 equal portions and shape into 1/2 inch thick patties.
Heat a cast iron or non-stick skillet over medium heat and coat with oil or butter.
Cook the patties in batches for 3–4 minutes per side, until browned and cooked through (160°F internal temp).
Transfer to a paper towel-lined plate to drain and serve hot.
Optional: Freeze cooled patties in a single layer, then store in freezer-safe bags for up to 2 months. Reheat before serving.
