These Baked Parmesan Garlic Potato Wedges are a crispy, flavorful side dish perfect for any meal. They are made with russet potatoes and coated in garlic powder, Italian seasoning, Parmesan cheese, and olive oil.

  • 34 large russet potatoes
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt (or to taste)
  • 1/4 teaspoon freshly ground black pepper (or to taste)
  • 1/2 cup freshly grated Parmesan cheese
  • Chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) to prepare for baking the potato wedges.
  2. Wash and dry the russet potatoes. Cut each potato lengthwise in half, then cut each half into three wedges, making about 6 wedges per potato.
  3. In a large mixing bowl, combine the potato wedges with olive oil, garlic powder, Italian seasoning, Parmesan, salt, and black pepper. Toss thoroughly to ensure each wedge is evenly coated.
  4. Lightly coat a baking pan with cooking spray. Arrange the potato wedges skin side down in a single layer. Sprinkle any remaining coating mixture on top of the wedges.
  5. Place the pan in the preheated oven and bake the wedges for 25 to 30 minutes, until golden brown and crispy outside and tender inside.
  6. Remove the wedges from the oven and sprinkle with chopped fresh parsley. Serve hot with your favorite dipping sauces.
