Ayam Goreng Ungkep is an irresistible Indonesian fried chicken recipe with tender pieces infused with a blend of aromatic spices.

  • 3.5 lbs whole chicken (cut into 8 pieces)
  • 3 cups coconut water
  • 2 tbsp coriander seeds (toasted)
  • 5 nuts candlenuts (ground)
  • 15 shallots (finely chopped)
  • 10 cloves garlic (crushed)
  • 1.6 inches ginger (peeled and sliced)
  • 1.6 inches galangal (peeled and sliced)
  • 1.6 inches turmeric (peeled and sliced)
  • 4 stalks lemongrass (bruised)
  • 10 leaves salam leaves
  • 10 leaves kaffir lime leaves (5 joined)
  • 1 tbsp salt
  • 1 tbsp sugar

Instructions

  1. Start by cutting the whole chicken into 8 evenly-sized pieces.
  2. In a large pot, combine the chicken with 3 cups of coconut water. Bring to a boil over medium-high heat.
  3. Preheat a dry pan over medium heat. Toast the coriander seeds and candlenuts until fragrant, about 3-5 minutes, then grind them into a paste.
  4. Into the boiling pot, add the toasted ground paste along with the shallots, garlic, ginger, galangal, and turmeric. Stir to combine everything.
  5. Toss in the bruised lemongrass, salam leaves, and kaffir lime leaves, as well as the salt and sugar. Stir well to infuse all the ingredients together.
  6. Reduce the heat to low, cover the pot, and allow the chicken to simmer for about 45 minutes.
  7. After simmering, give your Ayam Goreng Ungkep a taste and adjust the seasoning by adding more salt or sugar if desired.
