- 3.5 lbs whole chicken (cut into 8 pieces)
- 3 cups coconut water
- 2 tbsp coriander seeds (toasted)
- 5 nuts candlenuts (ground)
- 15 shallots (finely chopped)
- 10 cloves garlic (crushed)
- 1.6 inches ginger (peeled and sliced)
- 1.6 inches galangal (peeled and sliced)
- 1.6 inches turmeric (peeled and sliced)
- 4 stalks lemongrass (bruised)
- 10 leaves salam leaves
- 10 leaves kaffir lime leaves (5 joined)
- 1 tbsp salt
- 1 tbsp sugar
- Start by cutting the whole chicken into 8 evenly-sized pieces.
- In a large pot, combine the chicken with 3 cups of coconut water. Bring to a boil over medium-high heat.
- Preheat a dry pan over medium heat. Toast the coriander seeds and candlenuts until fragrant, about 3-5 minutes, then grind them into a paste.
- Into the boiling pot, add the toasted ground paste along with the shallots, garlic, ginger, galangal, and turmeric. Stir to combine everything.
- Toss in the bruised lemongrass, salam leaves, and kaffir lime leaves, as well as the salt and sugar. Stir well to infuse all the ingredients together.
- Reduce the heat to low, cover the pot, and allow the chicken to simmer for about 45 minutes.
- After simmering, give your Ayam Goreng Ungkep a taste and adjust the seasoning by adding more salt or sugar if desired.
