  • 2 1/4 teaspoons active dry yeast
  • 1 1/2 cups warm water (105-115°F or 40-46°C)
  • 1 tablespoon granulated sugar
  • 2 tablespoons light olive oil
  • 3 to 3 1/2 cups all-purpose flour
  • 1 tablespoon kosher salt
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon garlic powder
  • Coarse salt for topping

Instructions

  1. In a large mixing bowl or the bowl of a stand mixer, combine the warm water and granulated sugar. Sprinkle the active dry yeast over the top. Gently stir once or twice and let it sit for 5-10 minutes until foamy.
  2. Add the olive oil and 2 cups of the all-purpose flour to the yeast mixture. Mix on low speed with a dough hook (or by hand with a wooden spoon) until just combined. Then, add the salt and the remaining 1 to 1½ cups of flour gradually until a shaggy dough forms.
  3. Increase the mixer speed to medium-low and knead the dough for 7-10 minutes until it becomes smooth and elastic. If kneading by hand, turn the dough out onto a lightly floured surface and knead for 10-15 minutes.
  4. Lightly grease a large bowl with olive oil. Transfer the dough to the bowl, turning it once to coat. Cover the bowl with plastic wrap or a clean kitchen towel and place it in a warm spot for 1 to 1½ hours, or until doubled in size.
  5. Once doubled, gently punch down the dough to release the air. Turn the dough out onto a lightly floured surface and roll it into a rectangle about 1/2 inch thick. Cut the dough into 1-inch wide strips and stretch each strip to about 8-10 inches long. Arrange on two large baking sheets lined with parchment paper.
  6. Cover the baking sheets loosely with plastic wrap or a clean towel and let the breadsticks rise for another 30-45 minutes until puffy.
  7. Preheat your oven to 375°F (190°C). Bake the breadsticks for 12-15 minutes until light golden brown on top and bottom.
  8. While baking, melt the unsalted butter in a small bowl and stir in the garlic powder and coarse salt. Brush the hot breadsticks with the melted garlic butter mixture as soon as they come out of the oven.
