  • 1 teaspoon baking soda

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 cups peeled and diced apples
  • 3/4 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
  2. Whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. Beat butter, granulated sugar, and brown sugar until light and fluffy.
  4. Mix in eggs one at a time. Add vanilla extract and sour cream until smooth.
  5. Gradually add dry ingredients to wet mixture, mixing just until combined.
  6. Gently fold in diced apples and chopped pecans.
  7. Pour batter into prepared loaf pan and smooth top. Bake 55–65 minutes until a toothpick inserted comes out clean.
  8. Cool in pan 10–15 minutes before transferring to a rack.
